Cocoa story

Cocoa is a dominant culture in Ghana, which is also the second biggest cocoa exporter in the world. You all who love chocolate, here is something you'll probably interested in... From the cocoa tree to the cocoa bean ready to be grind into cocoa powder. It all start on the tree, in a fruit looking like that:


Cocoa tree is not a massive big tree, it rather grows in the shade of big trees in the jungle of Ghana's forest belt running across the lower part of the country.


Once picked from the tree or taken from the ground where it fell, it quickly turn to yellow:


Inside are the beans, surrounded by a fleshy white envelop:


The beans are supposed to be kept in a big jar and brought to fermentation for three or four days to develop the aroma, after what they are sun-dried:


Once dry, the beans loose their whitish envelop and reveal a brown envelop underneath:



When you remove this last envelop, you almost magically discover this familiar chocolate-brown color... This is called here the brown gold...
